Zucchini
Quiche(crustless)
INGREDIENTS
2 ½-3 zucchini (shredded, salted and strained)
¼c diced leek
¼c chopped cilantro
3-4T “Vegit” low sodium seasoning
1 pinch each of mint, marjarom and thyme
1 grind of salt
4 grinds white pepper
2 eggs
½ can creamed corn
3T milk
¼c plain yogurt
½ stick of cream cheese or 4 oz.
1/3 pkg of turkey bacon bits
Optional toppings:
Plain yogurt
Spiced nuts
Salsa Verde
Crème Fraiche
DIRECTIONS
1. Press zucchini into sieve. Try to remove as much of the water as
possible.
2. In one bowl, mix together the remaining ingredients. Butter or oil
the cake pan. Cook @ 350 degrees for 35 minutes. Let rest for 15
minutes.
3. Serve lukewarm with one or more toppings above.
