Persimmon Walnut Cookies
INGREDIENTS
STIR:
1 tsp baking powder
1 tsp baking soda
1 cup firm ripe fuyu persimmon puree
¾ cup sugar
¼ cup firmly packed lt. brown sugar
1 Tbsp butter
¾ cup boiling water
Beat into mixture:
1 egg
½ cup butter
Blend into this:
1 tsp cinnamon
½ tsp salt
2 cups flour (added ¼ cup at a time)
DIRECTIONS
1. Stir in ¾ cup chopped walnuts. Drop by rounded teaspoons
onto a greased cookie sheet. Bake at 350 for 8 to 10 minutes until
lightly browned.
