Ginger Garlic Carrots
1 lb carrots
1 Tbsp peanut oil
3 Tbsp coarsely chopped garlic
1 Tbsp finely chopped fresh ginger root
Salt and ground black pepper
2 Tbsp finely chopped fresh cilantro
2 Tbsp finely chopped spring onions or scallions
Peel the carrots and slice them thinly at a slight diagonal.
Heat a wok or large frying pan over a high heat
and add the oil.
When it is hot, add the garlic and ginger and stir-fry for 20 seconds,
until browned.
Then quickly add the carrots and stir-fry for 2
minutes longer.
Season with salt and pepper.
Add 3 to 4 tablespoons of water and stir-fry for 4
minutes or until carrots are tender and browned.
Stir in cilantro and spring onions and serve.
