Can’t Be Beets
Cookies
INGREDIENTS
4 2” beets
1 c sugar
Vanilla
1 large egg
3 T butter (melted)
1 2/3 c flour
½ t each: salt, baking soda and baking powder
1/3 c cocoa
1/3 c chopped nuts
Filling:
2 C powdered sugar
2 T cocoa
2 T pureed beets
2 T butter
Vanilla
DIRECTIONS
1. Cook and puree beets to = 1 c + 2 T for filling. Combine puree w/
sugar and vanilla. Add egg and melted butter. Sift dry ingredients, add
to beet mixture. Blend well, stir in nuts.
2. Drop dough by teaspoonfuls on greased sheet about 2”
apart. Flatten slightly with damp fingers. Bake at 350 for about 8
minutes. Let cool. Combine filling ingredients. Whip to spreadable
consistency. Sandwich cookies together in pairs w/ about 1 T filling
per.
