Beet Cake
Whisk together in Large bowl:
1 cup white sugar
1 1/3 ap flour
1 1/2 t baking soda
1 t baking powder
1 t cinnamon
1/2 t ground allspice
1/2 freshly grated nutmeg
1/2 ground ginger
1/2 t fine sea salt
Beat in a low speed with a hand mixer
2/3 c canola oil
3 large eggs
After all is combined ( do not overmix)
Stir in:
1.5 cups of grated beets raw (grate them on a cheese grater)
Bake at 350 degrees for 25-30 minutes or until a toothpick inserted
into the
center comes out clean
Allow cake to cool on a baking rack
Cream Cheese
Frosting
8 oz cream cheese ( room temperature)
6 table spoons of unsalted butter ( room temperature)
2 teaspoons of vanilla
Beat top ingredients until well mixed
Slowly beat in 2 cups of sifted powdered sugar until the frosting is
smooth and delicious.
After cake has cooled spread frosting evenly over the top of the cake
and
enjoy!!
