Zucchini Ribbon Alfredo

INGREDIENTS

Noodles:
4-5 BeWise Zucchini's Cut into thin strips, or made into noodles or ribbons with a spiralizer or mandolin slicer.

Sauce:
-1 C raw cashews, soaked in water for 1 hour to soften
-1/8 C water
-1 T apple cider vinegar
-1 t dried chives
-1/2 t dried parsley
-1/4 t garlic powder
-1/4 t dried dill
-1/4 t sea salt
-1/4 red onion, thinly sliced
-grated pine nuts
Optional: paprika, extra sea salt or TOM'S of MAINE: Dulse Flakes are a fantastic nutritionally savvy way to add flavor as well!

DIRECTIONS
Combine in food processor or blender until smooth & creamy. Top with pine nuts, extra dill & a little parsley if you desire. Serve "raw" uncooked for optimal enzyme nutrient value & alkaline living practices. Not into that? It's ok, sautée this recipe on the stove top with a little extra virgin olive oil & boom, you've got a fantastically vegan, cooked meal!

Tip: **The sauce can also be used as a veggie dip-serve chilled.
