Fresh Tomato Sauce


1 small onion (small diced)
2 cloves garlic (minced)
4 large heirloom tomatoes (diced)
Olive oil
Freshly chopped basil
Salt and pepper (to taste)


Add 2 T olive oil to medium sauce pot saute until translucent, stir in garlic, add tomatoes and cook down for 20 minutes, puree in blender mix in basil, add salt and pepper to taste. For a richer sauce put back on the stove and reduce until desired consistency is reached.
