Lucy’s Mexican Cole Slaw

4 cups finely shredded cabbage
1 cup thinly sliced sweet onion
3 avocados
1 cup mayonnaise
¼ cup fresh lime juice
1 jalapeno chile, seeded and finely chopped or a few dashes of Tabasco
Salt and white pepper to taste

1. Combine cabbage, onion and two chopped avocados in a large bowl. In another bowl mash the third avocado and blend with mayo, lime juice, jalapeno, salt and pepper. Pour over the cabbage and mix well. Chill for about an hour. Makes about 6 servings.
