Lettuce Soup

2 T butter
The white part of 2 large leeks (onion will also work)
1/8-1/4 t nutmeg
2-4 cloves of garlic
Juice of one lime
One bundle of cilantro
One bundle of parsley
One bundle of dill
2 large heads of lettuce*
13.5 oz can of coconut milk
13.5 oz of water
4 chicken bouillon cubes

1. Melt butter in a large pot.

2. Add sliced leek, nutmeg, garlic, lime juice, and fresh herbs. Once leeks are translucent add lettuce, liquids, and bouillon. Simmer until the lettuce spines are soft.

3. Remove from heat and blend in blender or food processor. Enjoy!

*Stiffer greens such as kale may be used. If you chose to do so consider adding 1t of honey or agave to balance the bitter flavor.
